Ingredients

Scale
  • 2 medium zucchinis, grated
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1/4 cup chopped green onions
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Grate the zucchinis and squeeze out excess moisture.
  2. In a mixing bowl, combine the grated zucchini, breadcrumbs, Parmesan cheese, eggs, green onions, garlic, salt, and pepper.
  3. Mix until well combined, creating a beautifully textured batter.
  4. Heat oil in a skillet over medium heat.
  5. Spoon the mixture into the skillet, flattening them to form patties.
  6. Cook for about 3-4 minutes on each side, until golden brown and crispy.
  7. Drain on paper towels and serve warm, optionally with sour cream or yogurt.
