Description

Delight in the warmth of Tropical Mango Cookies made with buttery dough, dried mango, and a hint of coconut. Each bite is a mini vacation to the tropics.


Ingredients

  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup dried mango, chopped
  • 1/2 cup shredded coconut (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Whisk together the flour, baking soda, and salt in another bowl.
  5. Blend the dry mixture into the wet mixture until fully combined.
  6. Fold in the chopped dried mango and shredded coconut, if using.
  7. Drop rounded tablespoons of dough onto ungreased baking sheets.
  8. Bake for 10 to 12 minutes or until edges are lightly golden.
  9. Allow cookies to cool on the baking sheet for a few minutes before transferring to wire racks.

Notes

For a zesty twist, add lime zest or chocolate chips for extra indulgence. Dough can be made ahead and stored in the fridge or frozen.
