- 1 lb ground beef or turkey
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (11 oz) corn, drained
- 8 corn tortillas, cut into quarters
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup salsa
- Toppings (sour cream, avocado, chopped cilantro, etc.)
Instructions
- Preheat your oven to 350°F (175°C).
- Cook the ground beef or turkey in a large skillet over medium heat until browned, draining any excess fat.
- Stir in the taco seasoning, black beans, corn, and salsa and let the ingredients mingle.
- Layer half of the tortilla quarters in a baking dish, followed by half of the meat mixture, and half of the shredded cheese. Repeat layering.
- Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
- Serve warm with your favorite toppings.
Notes
You can prep the casserole a day ahead and store it in the fridge before baking. Leftovers can be stored in an airtight container for up to 3 days.
