Description

A comforting and satisfying Taco Bake Casserole layered with meat, cheese, and flavorful ingredients, perfect for cozy family dinners.


Ingredients

  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (11 oz) corn, drained
  • 8 corn tortillas, cut into quarters
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup salsa
  • Toppings (sour cream, avocado, chopped cilantro, etc.)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the ground beef or turkey in a large skillet over medium heat until browned, draining any excess fat.
  3. Stir in the taco seasoning, black beans, corn, and salsa and let the ingredients mingle.
  4. Layer half of the tortilla quarters in a baking dish, followed by half of the meat mixture, and half of the shredded cheese. Repeat layering.
  5. Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
  6. Serve warm with your favorite toppings.

Notes

You can prep the casserole a day ahead and store it in the fridge before baking. Leftovers can be stored in an airtight container for up to 3 days.
