- 1.5 pounds small red potatoes
- 4 tablespoons butter
- 3 cloves garlic, minced
- 1 cup shredded cheese (cheddar, mozzarella, or your choice)
- ¼ cup chopped chives
- Salt and pepper, to taste
Instructions
- Start by boiling the small red potatoes until they are slightly soft, about 15–20 minutes.
- Carefully drain them and allow the potatoes to cool slightly.
- Using a fork, gently smash each potato to create a flat shape with some texture.
- In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 2 minutes.
- Carefully brush the garlic butter over the smashed potatoes.
- Season generously with salt and pepper to taste.
- Top the potatoes with cheese and chopped chives.
- Finally, roast the potatoes in the oven at 400°F (200°C) for about 20–25 minutes until crispy and golden.
Notes
Make-ahead: Boil and smash the potatoes ahead of time and add toppings before roasting. Store leftovers in an airtight container in the fridge for up to 3 days.
