Description

Delicious smashed potatoes topped with buttery garlic and cheese, perfect for cozy family dinners and holiday gatherings.


Ingredients

  • 1.5 pounds small red potatoes
  • 4 tablespoons butter
  • 3 cloves garlic, minced
  • 1 cup shredded cheese (cheddar, mozzarella, or your choice)
  • ¼ cup chopped chives
  • Salt and pepper, to taste

Instructions

  1. Start by boiling the small red potatoes until they are slightly soft, about 15–20 minutes.
  2. Carefully drain them and allow the potatoes to cool slightly.
  3. Using a fork, gently smash each potato to create a flat shape with some texture.
  4. In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté until fragrant, about 2 minutes.
  5. Carefully brush the garlic butter over the smashed potatoes.
  6. Season generously with salt and pepper to taste.
  7. Top the potatoes with cheese and chopped chives.
  8. Finally, roast the potatoes in the oven at 400°F (200°C) for about 20–25 minutes until crispy and golden.

Notes

Make-ahead: Boil and smash the potatoes ahead of time and add toppings before roasting. Store leftovers in an airtight container in the fridge for up to 3 days.
