- 2 lbs chicken thighs, boneless and skinless
- 2 cups sweet potatoes, peeled and diced
- 1 cup carrots, sliced
- 1 cup tomatoes, diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions
- Add the chicken thighs, sweet potatoes, carrots, tomatoes, onion, and garlic to a slow cooker.
- Pour in the chicken broth and add thyme, rosemary, salt, and pepper. Stir to combine all ingredients until everything is well-coated in the broth.
- Cover and cook on low for 360 minutes (6–8 hours) or on high for 240-300 minutes (4–5 hours).
- Stir in the heavy cream about 30 minutes before serving for a creamy finish.
- Serve warm in cozy bowls and enjoy your comforting goodness!
Notes
For additional greens, add fresh spinach or kale in the last 10 minutes of cooking. Consider adding red pepper flakes for some heat.
