- 4 cups hashbrowns, thawed
- 1 cup turkey sausage, cooked and crumbled
- 1 cup ham, diced (or turkey bacon, cooked and crumbled)
- 1 cup shredded cheddar cheese
- 6 large eggs
- 1 cup milk
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Cooking spray
Instructions
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish with cooking spray.
- Spread the hashbrowns evenly in the bottom of the prepared baking dish.
- In a bowl, mix together the turkey sausage, ham (or turkey bacon), and half of the cheese. Spread this mixture over the hashbrowns.
- In another bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper. Pour the egg mixture over the casserole.
- Sprinkle the remaining cheese on top.
- Bake for 45-55 minutes or until the eggs are set and the top is golden brown and bubbly.
- Allow to cool slightly before slicing and serving.
Notes
Prepare the casserole the night before for a hassle-free breakfast. Store leftovers in an airtight container in the fridge for up to 3 days.
