Ingredients

  • 1 cup rice
  • 2 cups beef broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 cup peas
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat a drizzle of olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic, cooking until softened and golden brown.
  3. Toss in the ground beef, cooking until browned and breaking it up with a spatula.
  4. Drain any excess fat from the beef.
  5. Stir in the rice, beef broth, diced tomatoes, and peas.
  6. Season with salt and pepper, stirring to combine.
  7. Bring to a gentle boil, then cover and let it simmer for 20 minutes.
  8. Fluff the rice with a fork before serving.
