Ingredients

  • 4 corn cobs
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Preheat the oven to 400°F (200°C) to get that cozy heat perfect for roasting.
  2. Prep the corn: Snap each corn cob in half and then slice lengthwise through each cob. Slice again into quarters for perfect rib-like pieces.
  3. Mix it up: In a large ziplock bag or bowl, combine the corn, olive oil, garlic powder, onion powder, chili powder, smoked paprika, salt, and pepper. Toss until every piece of corn is evenly coated with those lovely spices.
  4. Bake them: Arrange the corn ribs in a single layer on a baking sheet. Pop them in the oven and roast for 25-35 minutes, or until they reach your desired amount of golden-brown goodness.

Notes

You can prep the corn ribs in advance and store them in the fridge for up to 24 hours before roasting. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
