Description
Delightful Pineapple Fritter Rings, a perfect blend of crispy, fluffy, and sweet, making them an ideal comfort food for any occasion.
Ingredients
Scale
- 1 can of pineapple rings (or fresh pineapple slices)
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 egg
- 1/2 cup milk
- 1 teaspoon vanilla extract
- Oil for frying
- Powdered sugar for dusting
Instructions
- If using fresh pineapple, slice it into rings. If you’re using canned pineapple, drain and pat dry.
- In a mixing bowl, combine the flour, sugar, baking powder, and salt.
- In another bowl, whisk together the egg, milk, and vanilla extract until smooth.
- Gently combine the wet and dry ingredients until just mixed. Don’t worry if there are some lumps; we want our batter to be deliciously thick!
- Heat oil in a deep fryer or a deep pan to 375°F (190°C) for optimal frying.
- Dip each pineapple ring into the batter, allowing any excess to drip off before carefully placing it into the hot oil.
- Fry the rings until golden brown, about 2-3 minutes on each side. Keep an eye on them to ensure they don’t burn!
- Once golden, remove the fritters and drain them on paper towels to remove excess oil.
- Dust generously with powdered sugar before serving. Best enjoyed warm!
Notes
Store leftovers in an airtight container in the fridge for up to two days. Reheat in an oven for a few minutes to restore crispiness.
