Description

Delightful Pineapple Fritter Rings, a perfect blend of crispy, fluffy, and sweet, making them an ideal comfort food for any occasion.


Ingredients

Scale
  • 1 can of pineapple rings (or fresh pineapple slices)
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • Oil for frying
  • Powdered sugar for dusting

Instructions

  1. If using fresh pineapple, slice it into rings. If you’re using canned pineapple, drain and pat dry.
  2. In a mixing bowl, combine the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the egg, milk, and vanilla extract until smooth.
  4. Gently combine the wet and dry ingredients until just mixed. Don’t worry if there are some lumps; we want our batter to be deliciously thick!
  5. Heat oil in a deep fryer or a deep pan to 375°F (190°C) for optimal frying.
  6. Dip each pineapple ring into the batter, allowing any excess to drip off before carefully placing it into the hot oil.
  7. Fry the rings until golden brown, about 2-3 minutes on each side. Keep an eye on them to ensure they don’t burn!
  8. Once golden, remove the fritters and drain them on paper towels to remove excess oil.
  9. Dust generously with powdered sugar before serving. Best enjoyed warm!

Notes

Store leftovers in an airtight container in the fridge for up to two days. Reheat in an oven for a few minutes to restore crispiness.
