Description

Ingredients

  • 1 cup creamy peanut butter
  • 1 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup jelly or jam (strawberry, grape, or raspberry)
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the creamy peanut butter, brown sugar, egg, vanilla extract, baking soda, and salt in a large mixing bowl and beat until smooth.
  3. Grease a muffin tin or line it with mini cupcake liners.
  4. Scoop about one tablespoon of dough into each cup and press down the center to create a well.
  5. Bake for 10-12 minutes, until the edges are golden brown.
  6. Cool slightly, then press the centers down further.
  7. Dollop your chosen jelly into each cookie cup.
  8. Dust with powdered sugar before serving, if desired.
