- Optional: powdered sugar for dusting
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the creamy peanut butter, brown sugar, egg, vanilla extract, baking soda, and salt in a large mixing bowl and beat until smooth.
- Grease a muffin tin or line it with mini cupcake liners.
- Scoop about one tablespoon of dough into each cup and press down the center to create a well.
- Bake for 10-12 minutes, until the edges are golden brown.
- Cool slightly, then press the centers down further.
- Dollop your chosen jelly into each cookie cup.
- Dust with powdered sugar before serving, if desired.
Notes
