Description

Delightful dessert bars featuring a juicy peach filling nestled in a crumbly crust, perfect for summer gatherings.


Ingredients

  • 2 1/2 cups (350 g) all-purpose flour
  • 2/3 cup (140 g) granulated sugar
  • 1/2 teaspoon salt
  • 1 1/4 cups (280 g) cold unsalted butter, cut into small cubes
  • 1/4 cup (50 g) brown sugar, preferably dark
  • 1 cup (200 g) granulated sugar
  • 1/4 cup (35 g) all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 5 cups pitted, peeled, and chopped peaches (about 78 peaches/2.5 pounds)
  • 6 tablespoons (90 ml) heavy cream
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Preheat your oven to 350°F (180°C). Grease a 9×13-inch pan or line with parchment paper.
  2. Process flour, granulated sugar, and salt in a food processor until combined. Add butter and pulse until resembling coarse meal.
  3. Set aside 1½ cups of the crumb mixture for topping.
  4. Press remaining crumbs into the pan to create the crust. Bake for about 15 minutes.
  5. Make the streusel topping by adding brown sugar to the remaining mixture and tossing until clumps form.
  6. Mix together sugar, 1/4 cup flour, cinnamon, and salt in a bowl. Toss in the chopped peaches.
  7. Add heavy cream and vanilla extract to the peach mixture and stir until combined.
  8. Pour the peach mixture over the crust and sprinkle streusel on top.
  9. Bake for about 45 minutes until juices are bubbling and topping is golden brown.
  10. Cool completely on a wire rack and refrigerate for at least 2 hours before cutting into squares.

Notes

These bars keep well in the fridge for up to three days. For best results, slice with a warm knife.
