Instructions
- Preheat the oven to 350°F (175°C).
- Melt the butter in a skillet over medium heat. Stir in the brown sugar, apple juice, and cinnamon until bubbly.
- Lay the peach slices in the caramel mixture, ensuring they’re beautifully arranged, then remove from heat.
- Whisk together the flour, baking powder, and salt in a bowl until well combined.
- Cream the granulated sugar and eggs in another bowl until light and fluffy. Mix in the milk and vanilla extract.
- Add the flour mixture to the wet ingredients gradually, mixing until just combined.
- Pour the batter over the peaches in the skillet, ensuring it covers the fruit evenly.
- Bake for 30-35 minutes or until golden brown and a toothpick inserted in the center comes out clean.
- Allow to cool slightly, then invert the cake onto a serving plate. Serve warm with a scoop of vanilla ice cream or whipped cream.
