- 2 pounds baby potatoes
- 1/4 cup olive oil
- 1 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and halve the baby potatoes, making sure to leave some of their natural sweetness intact.
- Combine olive oil, minced garlic, salt, and black pepper in a large bowl.
- Toss the halved potatoes in the mixture until they’re evenly coated.
- Spread the potatoes out on a baking sheet in a single layer.
- Sprinkle grated Parmesan cheese over the potatoes, covering each piece.
- Roast in the preheated oven for 25-30 minutes or until golden brown and crispy.
