Description

Crispy on the outside and tender on the inside, these Parmesan Roasted Potatoes are enveloped in a savory embrace of garlic and cheese, making them a perfect comforting side dish.


Ingredients

  • 2 pounds baby potatoes
  • 1/4 cup olive oil
  • 1 cup grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and halve the baby potatoes, making sure to leave some of their natural sweetness intact.
  3. Combine olive oil, minced garlic, salt, and black pepper in a large bowl.
  4. Toss the halved potatoes in the mixture until they’re evenly coated.
  5. Spread the potatoes out on a baking sheet in a single layer.
  6. Sprinkle grated Parmesan cheese over the potatoes, covering each piece.
  7. Roast in the preheated oven for 25-30 minutes or until golden brown and crispy.
  8. Garnish with freshly chopped parsley before serving.
