- 2 (6–8 oz) filet mignon steaks, 1.5–2 inches thick
- 1 tbsp kosher salt
- 1 tsp black pepper
- 2 tbsp avocado oil
- 3 tbsp unsalted butter
- 2 garlic cloves, crushed
- 2 sprigs fresh thyme
Instructions
- Preheat the oven to 275°F (135°C).
- Pat the steaks dry with paper towels and season with kosher salt and black pepper. Let rest for 30 minutes.
- Heat a skillet over medium-high heat and add avocado oil. Sear the steaks for 2 minutes on each side.
- Add butter, crushed garlic, and thyme to the skillet. Baste the steaks with the mixture for 1 minute.
- Transfer the skillet to the oven and bake for 8–12 minutes until the internal temperature reaches 130°F (54°C) for medium-rare.
- Remove from the oven and let the steaks rest for 10 minutes.
- Slice, serve, and enjoy!
Notes
Letting the steaks rest is crucial to retain their juices. Store any leftovers in an airtight container for up to 3 days.
