Description

A foolproof method for achieving steakhouse perfection at home with buttery richness and fragrant herbs.


Ingredients

Scale
  • 2 (6–8 oz) filet mignon steaks, 1.5–2 inches thick
  • 1 tbsp kosher salt
  • 1 tsp black pepper
  • 2 tbsp avocado oil
  • 3 tbsp unsalted butter
  • 2 garlic cloves, crushed
  • 2 sprigs fresh thyme

Instructions

  1. Preheat the oven to 275°F (135°C).
  2. Pat the steaks dry with paper towels and season with kosher salt and black pepper. Let rest for 30 minutes.
  3. Heat a skillet over medium-high heat and add avocado oil. Sear the steaks for 2 minutes on each side.
  4. Add butter, crushed garlic, and thyme to the skillet. Baste the steaks with the mixture for 1 minute.
  5. Transfer the skillet to the oven and bake for 8–12 minutes until the internal temperature reaches 130°F (54°C) for medium-rare.
  6. Remove from the oven and let the steaks rest for 10 minutes.
  7. Slice, serve, and enjoy!

Notes

Letting the steaks rest is crucial to retain their juices. Store any leftovers in an airtight container for up to 3 days.
