- ¼ cup mayonnaise
- ¼ cup sour cream
- ½ cup cotija cheese, crumbled
- 1 lime, juiced
- 1 tsp chili powder
- ¼ tsp smoked paprika
- ¼ tsp salt
- 2 tbsp chopped cilantro
Instructions
- Prepare the corn: If using fresh corn, shuck the ears and remove the kernels. Ensure that the corn is dry.
- Mix the dressing: In a medium bowl, combine the mayonnaise, sour cream, lime juice, chili powder, smoked paprika, and salt. Stir until smooth.
- Combine corn and dressing: In a large bowl, add the corn kernels and pour the dressing over them. Toss gently.
- Add the cheese and cilantro: Gently fold in the crumbled cotija cheese and chopped cilantro.
- Garnish: Serve immediately with an extra squeeze of lime and a sprinkle of chili powder.
