Ingredients

  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • ½ cup cotija cheese, crumbled
  • 1 lime, juiced
  • 1 tsp chili powder
  • ¼ tsp smoked paprika
  • ¼ tsp salt
  • 2 tbsp chopped cilantro

Instructions

  1. Prepare the corn: If using fresh corn, shuck the ears and remove the kernels. Ensure that the corn is dry.
  2. Mix the dressing: In a medium bowl, combine the mayonnaise, sour cream, lime juice, chili powder, smoked paprika, and salt. Stir until smooth.
  3. Combine corn and dressing: In a large bowl, add the corn kernels and pour the dressing over them. Toss gently.
  4. Add the cheese and cilantro: Gently fold in the crumbled cotija cheese and chopped cilantro.
  5. Garnish: Serve immediately with an extra squeeze of lime and a sprinkle of chili powder.
