Description

Ingredients

  • 1/4 teaspoon salt
  • 2 tablespoons butter
  • 1 teaspoon vanilla extract
  • Zest of 1 lemon

Instructions

  1. In a saucepan, whisk together the sugar, cornstarch, and salt until well combined.
  2. Gradually add the milk and lemon juice while stirring continuously to avoid any lumps.
  3. Cook over medium heat, stirring continuously until the mixture thickens — this should take about 5-10 minutes.
  4. Once thickened, remove from heat and stir in the butter, vanilla extract, and fresh lemon zest.
  5. Pour the lemon cream into a bowl, cover with plastic wrap, and refrigerate until chilled.
  6. Serve chilled as a refreshing dessert or a lovely topping for your favorite sweet treats.

Notes

This cream can be made a day in advance and stored in the refrigerator for up to 3 days. Stir in a little milk if it thickens too much after storage.
