Ingredients
Scale
- 1 cup milk
- 1/2 cup lemon juice
- 1 cup sugar
- 3 tablespoons cornstarch
- 1/4 teaspoon salt
- 2 tablespoons butter
- 1 teaspoon vanilla extract
- Zest of 1 lemon
Instructions
- In a saucepan, whisk together the sugar, cornstarch, and salt until well combined.
- Gradually add the milk and lemon juice while stirring continuously to avoid any lumps.
- Cook over medium heat, stirring continuously until the mixture thickens — this should take about 5-10 minutes.
- Once thickened, remove from heat and stir in the butter, vanilla extract, and fresh lemon zest.
- Pour the lemon cream into a bowl, cover with plastic wrap, and refrigerate until chilled.
- Serve chilled as a refreshing dessert or a lovely topping for your favorite sweet treats.
Notes
This cream can be made a day in advance and stored in the refrigerator for up to 3 days. Stir in a little milk if it thickens too much after storage.
