Ingredients

  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice
  • 1 cup fresh blueberries
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9 inch baking pan with parchment paper.
  2. Cream the softened butter with the powdered sugar until light and fluffy.
  3. Add the flour and salt, mixing until combined into a soft dough.
  4. Press the dough firmly into the bottom of the prepared pan, creating a sturdy base.
  5. Bake for 15 minutes, then remove from the oven to cool slightly.
  6. Whisk together the lemon juice, sugar, and baking powder until fully combined.
  7. Fold the blueberries and lemon zest into the mixture.
  8. Pour the mixture over the baked shortbread crust and spread it evenly.
