Description

Ingredients

  • 4 medium-sized chicken breasts (about 2 pounds or 78 ounces each)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley
  • 1/2 teaspoon dried mustard
  • 1/2 teaspoon chili powder (optional)
  • 1 1/2 teaspoons kosher salt, or to taste
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil or avocado oil

Instructions

  1. Preheat your oven to 425°F and lightly grease a large baking dish or rimmed baking sheet.
  2. Using a meat pounder or a rolling pin, gently pound the thickest part of each chicken breast until they are even in thickness.
  3. Combine the chicken breasts in a bowl and toss with all the spices and olive oil until evenly coated.
  4. Place the seasoned chicken breasts in the prepared baking dish, spreading them out evenly.
  5. Transfer the dish to the preheated oven and bake for 18-20 minutes, or until the internal temperature reads 165°F.
  6. Allow the chicken to rest for several minutes before slicing and serving.

Store any leftovers in an airtight container in the refrigerator for up to 4 days. Consider seasoning chicken the night before for convenience.
