Description

This dish combines tender chicken with sweet peaches and a spicy kick from jalapenos for a delightful and easy meal.


Ingredients

  • 4 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 jalapenos, diced
  • 3 peaches, diced
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon cornstarch

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts generously with salt and black pepper on both sides.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat until shimmering.
  4. Add the chicken breasts to the skillet, searing them for 3-4 minutes on each side until golden brown.
  5. Remove the chicken from the skillet and set aside on a plate.
  6. Toss in the diced jalapenos and peaches, stirring continually for 2-3 minutes until slightly softened.
  7. Whisk together the honey, apple cider vinegar, water, and cornstarch in a small bowl until smooth.
  8. Pour the honey mixture over the jalapenos and peaches, stirring well to combine.
  9. Return the seared chicken breasts to the skillet, spooning some sauce over the top.
  10. Transfer the skillet to the oven and bake for 20-25 minutes, until the chicken is cooked through.
  11. Remove from the oven and let it rest for a few minutes before serving.
  12. Serve while warm, spooning extra sauce over the top.

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat gently to maintain juiciness.
