Description

This creamy, dreamy Italian Love Cake features soft chocolate layers with silky ricotta cheese and a rich chocolate pudding frosting, perfect for family gatherings or cozy nights in.


Ingredients

  • 2 15-ounce containers of ricotta cheese
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs (room temperature)
  • 1 15.25-ounce box chocolate cake mix
  • 1/2 cup canola oil
  • 1 cup water
  • 3 large eggs
  • 1 5-ounce box instant chocolate pudding
  • 3 cups cold milk
  • 1 8-ounce container whipped topping, thawed

Instructions

  1. Preheat the oven to 350°F and grease a 9×13 baking dish.
  2. Combine ricotta cheese, sugar, vanilla extract, and 4 eggs until smooth.
  3. Whisk together the chocolate cake mix, canola oil, water, and remaining 3 eggs.
  4. Pour half the cake mix into the prepared baking dish.
  5. Spoon the ricotta layer evenly over the cake batter.
  6. Gently pour the remaining chocolate cake batter on top.
  7. Bake for 45-50 minutes or until a toothpick comes out clean, then cool completely.
  8. Whisk together instant chocolate pudding mix and cold milk, then fold in whipped topping.
  9. Frost the cooled cake with chocolate pudding frosting and chill for at least 1 hour before serving.
