Description

A delightful side dish of honey roasted colorful carrots, perfect for any occasion, blending sweetness and earthy flavors.


Ingredients

  • 1 pound colorful carrots (rainbow carrots)
  • 2 tbsp butter
  • 2 tbsp honey
  • 2 tbsp brown sugar
  • Fresh thyme (to taste)
  • Salt (to taste)
  • Pepper (to taste)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the colorful carrots by washing and peeling them. Slice large carrots in half lengthwise.
  3. Mix the melted butter, honey, brown sugar, fresh thyme, salt, and pepper in a large bowl.
  4. Toss the prepared carrots in the honey-butter mixture until fully coated.
  5. Arrange the carrots in a single layer on a parchment-lined baking sheet.
  6. Roast for 25-30 minutes, tossing halfway through, until tender and golden.

Notes

For an air fryer method, preheat to 375°F (190°C) and cook for 15-20 minutes, shaking halfway through.
