- 1 pound colorful carrots (rainbow carrots)
- 2 tbsp butter
- 2 tbsp honey
- 2 tbsp brown sugar
- Fresh thyme (to taste)
- Salt (to taste)
- Pepper (to taste)
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the colorful carrots by washing and peeling them. Slice large carrots in half lengthwise.
- Mix the melted butter, honey, brown sugar, fresh thyme, salt, and pepper in a large bowl.
- Toss the prepared carrots in the honey-butter mixture until fully coated.
- Arrange the carrots in a single layer on a parchment-lined baking sheet.
- Roast for 25-30 minutes, tossing halfway through, until tender and golden.
Notes
For an air fryer method, preheat to 375°F (190°C) and cook for 15-20 minutes, shaking halfway through.
