Description

A comforting and hearty taco pasta dish packed with protein and flavor, perfect for family dinners and meal prep.


Ingredients

  • 8 ounces pasta (your choice)
  • 1 pound ground turkey or beef
  • 1 packet taco seasoning
  • 1 cup salsa
  • 2 cups black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup Greek yogurt or sour cream (for serving)
  • Chopped cilantro (optional, for garnish)

Instructions

  1. Cook the pasta according to package instructions and drain.
  2. In a large skillet, brown the ground turkey or beef over medium heat until fully cooked. Drain excess fat.
  3. Stir in the taco seasoning, salsa, black beans, and corn; cook for an additional 5 minutes.
  4. Add the cooked pasta to the skillet and mix well.
  5. Remove from heat and stir in the shredded cheese until melted.
  6. Serve with a dollop of Greek yogurt or sour cream and garnish with cilantro if desired.
