Description

Tender chicken marinated in creamy coconut goodness and zesty lime, perfect for grilling and sharing with friends.


Ingredients

  • 1 lb chicken breast, cut into cubes
  • 1 can (13.5 oz) coconut milk
  • 3 tablespoons soy sauce
  • 2 tablespoons fish sauce
  • 2 tablespoons brown sugar
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon lime juice
  • 1 tablespoon red curry paste
  • Skewers (soaked in water if using wooden ones)
  • Fresh cilantro (for garnish)
  • Lime wedges (for serving)

Instructions

  1. Combine coconut milk, soy sauce, fish sauce, brown sugar, garlic, ginger, lime juice, and red curry paste in a bowl. Mix well until everything is nicely incorporated.
  2. Add the chicken cubes to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor.
  3. Preheat the grill to medium-high heat, ready to create those beautiful grill marks!
  4. Thread the marinated chicken onto the skewers, packing them closely, but not too tight.
  5. Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the chicken is fully cooked and showcases those lovely grill marks.
  6. Once finished, garnish the skewers with fresh cilantro and serve with lime wedges for an added zest.

Notes

For a spicy kick, add Sriracha to the marinade. Leftovers can be stored in an airtight container for up to 3 days.
