- 1 lb chicken breast, cut into cubes
- 1 can (13.5 oz) coconut milk
- 3 tablespoons soy sauce
- 2 tablespoons fish sauce
- 2 tablespoons brown sugar
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon lime juice
- 1 tablespoon red curry paste
- Skewers (soaked in water if using wooden ones)
- Fresh cilantro (for garnish)
- Lime wedges (for serving)
Instructions
- Combine coconut milk, soy sauce, fish sauce, brown sugar, garlic, ginger, lime juice, and red curry paste in a bowl. Mix well until everything is nicely incorporated.
- Add the chicken cubes to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours for maximum flavor.
- Preheat the grill to medium-high heat, ready to create those beautiful grill marks!
- Thread the marinated chicken onto the skewers, packing them closely, but not too tight.
- Place the skewers on the grill and cook for 10-15 minutes, turning occasionally, until the chicken is fully cooked and showcases those lovely grill marks.
- Once finished, garnish the skewers with fresh cilantro and serve with lime wedges for an added zest.
Notes
For a spicy kick, add Sriracha to the marinade. Leftovers can be stored in an airtight container for up to 3 days.
