Instructions
- Whisk together the olive oil, lemon juice, minced garlic, dried oregano, and a generous pinch of salt and pepper to create the marinade.
- Add the chicken cubes to the marinade, coating them evenly. Cover the bowl and refrigerate for at least 30 minutes.
- If using wooden skewers, soak them in water for about 30 minutes to prevent burning on the grill.
- Preheat your grill to medium-high heat.
- Thread the marinated chicken and any optional vegetables onto the skewers.
- Grill the kabobs for 10-15 minutes, turning occasionally, until the chicken is cooked through.
