  • 1 cup mixed vegetables (bell peppers, carrots, snap peas)
  • 1 cup mushrooms (sliced)
  • 200g protein of choice (chicken, beef, or tofu)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon oyster sauce (optional)
  • 2 green onions (sliced)
  • 1 clove garlic (minced)

  1. Cook the udon noodles according to package instructions and set aside.
  2. In a large pan or wok, heat sesame oil over medium-high heat.
  3. Add minced garlic and stir-fry for about 30 seconds until fragrant.
  4. Add your choice of protein and cook until browned and cooked through.
  5. Toss in the mixed vegetables and mushrooms; stir-fry until they are tender and vibrant.
  6. Stir in the cooked udon noodles, soy sauce, and oyster sauce (if using).
