Description

Tender and fluffy pancakes that are perfect for busy mornings or brunch gatherings, bringing warmth and nostalgia to your breakfast table.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract

Instructions

  1. Mix the flour, sugar, baking powder, and salt together until combined.
  2. Whisk together the milk, egg, melted butter, and vanilla extract until smooth and creamy.
  3. Pour the wet ingredients into the dry ingredients and gently stir until combined (do not overmix; a few lumps are okay!).
  4. Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake onto the skillet.
  5. Cook until bubbles form on the surface of the pancake, then flip and cook until golden brown, about 2-3 minutes per side.
  6. Serve warm with your favorite toppings, be it maple syrup, fresh fruit, or a dollop of whipped cream.

Notes

To ensure your pancakes turn out perfectly fluffy, don’t overmix the batter. Leftover pancakes can be stored in the fridge for up to 3 days or frozen for later enjoyment.
