Instructions
- Mix the flour, sugar, baking powder, and salt together until combined.
- Whisk together the milk, egg, melted butter, and vanilla extract until smooth and creamy.
- Pour the wet ingredients into the dry ingredients and gently stir until combined (do not overmix; a few lumps are okay!).
- Heat a non-stick skillet over medium heat and pour 1/4 cup of batter for each pancake onto the skillet.
- Cook until bubbles form on the surface of the pancake, then flip and cook until golden brown, about 2-3 minutes per side.
- Serve warm with your favorite toppings, be it maple syrup, fresh fruit, or a dollop of whipped cream.
Notes
To ensure your pancakes turn out perfectly fluffy, don’t overmix the batter. Leftover pancakes can be stored in the fridge for up to 3 days or frozen for later enjoyment.
