- 2 tablespoons vegetable oil
- 8 ounces linguine (or ramen, spaghetti, fettuccini)
- 3 cloves garlic, minced
- 1 bell pepper, diced
- 1 carrot, julienned
- 1/4 cup soy sauce (or Tamari, or Coconut Aminos)
- 2 tablespoons honey (or agave syrup, or brown sugar)
- 1/2 cup peanut butter
- 1 tablespoon chili sauce
- 1/4 cup chopped peanuts
- 2 green onions, chopped
- 1 tablespoon sesame seeds
Instructions
- Cook the noodles according to package instructions. Drain and set aside.
- In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic, diced bell pepper, and julienned carrot. Sauté until softened, about 4-5 minutes.
- In a separate bowl, whisk together the soy sauce, honey, peanut butter, and chili sauce until smooth.
- Add the cooked noodles to the skillet with the sautéed vegetables. Drizzle the sauce over everything and toss gently to combine.
- Transfer to serving bowls and top with chopped peanuts, sliced green onions, and sesame seeds. Enjoy warm!
Notes
For a spicy kick, add more chili sauce or red pepper flakes. Feel free to swap in different vegetables or proteins as per your preference.
