Description

A comforting bowl of creamy noodles with a rich peanut sauce, perfect for busy weeknights and customizable to your liking.


Ingredients

  • 2 tablespoons vegetable oil
  • 8 ounces linguine (or ramen, spaghetti, fettuccini)
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 carrot, julienned
  • 1/4 cup soy sauce (or Tamari, or Coconut Aminos)
  • 2 tablespoons honey (or agave syrup, or brown sugar)
  • 1/2 cup peanut butter
  • 1 tablespoon chili sauce
  • 1/4 cup chopped peanuts
  • 2 green onions, chopped
  • 1 tablespoon sesame seeds

Instructions

  1. Cook the noodles according to package instructions. Drain and set aside.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic, diced bell pepper, and julienned carrot. Sauté until softened, about 4-5 minutes.
  3. In a separate bowl, whisk together the soy sauce, honey, peanut butter, and chili sauce until smooth.
  4. Add the cooked noodles to the skillet with the sautéed vegetables. Drizzle the sauce over everything and toss gently to combine.
  5. Transfer to serving bowls and top with chopped peanuts, sliced green onions, and sesame seeds. Enjoy warm!

Notes

For a spicy kick, add more chili sauce or red pepper flakes. Feel free to swap in different vegetables or proteins as per your preference.
