- 4 bell peppers (any color)
- 1 cup cooked rice
- 1 lb ground beef (or ground turkey)
- 1 cup Italian tomato sauce
- 1 cup shredded cheese (mozzarella or cheddar)
- Salt and pepper to taste
- Optional: cauliflower rice for a low-carb version
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and carefully remove the seeds.
- In a skillet over medium heat, cook the ground beef until browned, then drain any excess fat.
- In a mixing bowl, combine the cooked rice, Italian tomato sauce, cooked beef, salt, and pepper. Mix until well combined.
- Stuff the bell peppers generously with the mixture until they are filled to the brim.
- Place the stuffed peppers upright in a baking dish and sprinkle the shredded cheese on top.
- Cover the dish with foil and place it in the oven to bake for 25-30 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Let the stuffed peppers cool for a few minutes before serving.

Make ahead by prepping the stuffed peppers a day in advance and storing them in the fridge before baking for convenience.
