Description

Vibrant bell peppers stuffed with savory beef, rice, and bubbling cheese, perfect for family dinners.


Ingredients

  • 4 bell peppers (any color)
  • 1 cup cooked rice
  • 1 lb ground beef (or ground turkey)
  • 1 cup Italian tomato sauce
  • 1 cup shredded cheese (mozzarella or cheddar)
  • Salt and pepper to taste
  • Optional: cauliflower rice for a low-carb version

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and carefully remove the seeds.
  3. In a skillet over medium heat, cook the ground beef until browned, then drain any excess fat.
  4. In a mixing bowl, combine the cooked rice, Italian tomato sauce, cooked beef, salt, and pepper. Mix until well combined.
  5. Stuff the bell peppers generously with the mixture until they are filled to the brim.
  6. Place the stuffed peppers upright in a baking dish and sprinkle the shredded cheese on top.
  7. Cover the dish with foil and place it in the oven to bake for 25-30 minutes.
  8. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  9. Let the stuffed peppers cool for a few minutes before serving.

Notes

Make ahead by prepping the stuffed peppers a day in advance and storing them in the fridge before baking for convenience.
