Description

A delightful and creamy shrimp dish with sun-dried tomatoes and fresh spinach, perfect for a comforting meal any night.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Pasta or mashed potatoes for serving

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add garlic and cook until fragrant, about 1 minute.
  3. Stir in sun-dried tomatoes and cook for a couple of minutes.
  4. Mix in spinach and cook until wilted.
  5. Pour in heavy cream and bring to a simmer.
  6. Add shrimp and cook until they turn pink, about 3-5 minutes.
  7. Season with basil, salt, and pepper to taste.
  8. Serve over pasta or mashed potatoes and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop, adding a splash of cream if necessary.
