Description

A warm and comforting dish featuring golden chicken breasts in a rich, creamy sauce with cherry tomatoes and fresh spinach.


Ingredients

  • 4 chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup spinach, fresh
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Italian seasoning to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until golden brown and cooked through, about 6-7 minutes per side. Once done, remove the chicken and set aside.
  2. In the same skillet, add the minced garlic and sauté until fragrant, about 1 minute.
  3. Toss in the halved cherry tomatoes and cook until they begin to soften, bursting with flavor.
  4. Pour in the heavy cream and sprinkle the grated Parmesan cheese. Stir everything together and bring to a gentle simmer, allowing the ingredients to dance together.
  5. Add the fresh spinach and cook until it wilts, brightening the dish with its lovely green hue.
  6. Return the golden chicken to the skillet and coat it in the creamy sauce, making sure it’s enveloped in that delicious goodness.
  7. Serve warm with a sprinkle of Italian seasoning on top, and watch everyone’s eyes light up!
