- 4 chicken breasts
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- 1 cup spinach, fresh
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Italian seasoning to taste
Instructions
- Heat the olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook until golden brown and cooked through, about 6-7 minutes per side. Once done, remove the chicken and set aside.
- In the same skillet, add the minced garlic and sauté until fragrant, about 1 minute.
- Toss in the halved cherry tomatoes and cook until they begin to soften, bursting with flavor.
- Pour in the heavy cream and sprinkle the grated Parmesan cheese. Stir everything together and bring to a gentle simmer, allowing the ingredients to dance together.
- Add the fresh spinach and cook until it wilts, brightening the dish with its lovely green hue.
- Return the golden chicken to the skillet and coat it in the creamy sauce, making sure it’s enveloped in that delicious goodness.
- Serve warm with a sprinkle of Italian seasoning on top, and watch everyone’s eyes light up!
