A warm, creamy chili combining white cheddar and apples for a comforting fall dish.

- 1 lb chicken breast, diced
- 1 cup white cheddar cheese, shredded
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) white beans, drained and rinsed
- 1 cup apple, diced
- 4 cups chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat olive oil in a large pot over medium heat until shimmering.
- Add chopped onion and minced garlic, sautéing until translucent, about 3-4 minutes.
- Toss in diced chicken, cooking until browned and just cooked through, about 5-7 minutes.
- Stir in cumin and chili powder, cooking for another minute.
- Pour in chicken broth, then add white beans and diced apple. Bring to a boil.
- Reduce heat and let simmer gently for 20 minutes.
- Stir in white cheddar cheese until melted and creamy.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
