Description

This easy slow cooker cowboy casserole is a comforting blend of tender potatoes, savory beef, and melty cheese, perfect for busy weeknights.


Ingredients

  • 1 pound ground beef
  • 4 cups potatoes, diced
  • 1 can (15 oz) beans (your choice), drained and rinsed
  • 1 cup corn, frozen or canned
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 can (28 oz) diced tomatoes with juices
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon chili powder (optional)

Instructions

  1. Add the ground beef, diced potatoes, beans, corn, shredded cheese, diced tomatoes, chopped onion, minced garlic, salt, pepper, and chili powder to the slow cooker.
  2. Stir everything together until well combined.
  3. Cover the slow cooker with a lid. Cook on low for 360-480 minutes or on high for 180-240 minutes until the potatoes are tender and the meat is fully cooked.
  4. Once cooked, give it a good stir and serve hot. Enjoy!
