Description

A heartwarming twist on traditional cabbage rolls, this casserole combines savory beef, tender cabbage, and melted cheese for a comforting family meal.


Ingredients

  • 2 small onions, diced
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic (or 1 teaspoon garlic powder)
  • 1 green bell pepper (can use red or yellow)
  • 1 pound of lean ground beef
  • 1/2 tablespoon onion powder
  • 1/2 teaspoon oregano
  • 1/2 teaspoon smoked or sweet paprika
  • 1 can diced tomatoes (14 oz can)
  • Salt and pepper to taste
  • 1/2 a large head of cabbage
  • 1 to 2 cups of shredded cheddar cheese (can use Monterey Jack cheese)

Instructions

  1. Prepare your vegetables by dicing the onions and bell peppers, and mincing the garlic. Cut the cabbage in half, remove outer leaves, core it, and chop half into bite-sized pieces.
  2. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the onions and garlic, cooking until soft and aromatic. Once softened, add the bell pepper; remove and set aside.
  3. Add another tablespoon of olive oil and the ground beef to the same skillet. Cook until browned, breaking it into small pieces as it cooks.
  4. Stir in the onion powder, oregano, paprika, diced tomatoes, salt, and pepper, allowing the flavors to meld with the beef.
  5. Add chopped cabbage to the pan, gently stir to blend. Cover with a lid, cooking on medium heat for about 10 minutes. Stir and cook for another 15 minutes until the cabbage is tender.
  6. Top the dish with shredded cheese and cover for a couple of minutes to let it melt. Serve warm and enjoy!

Notes

For make-ahead options, prepare the casserole a day in advance without adding cheese until ready to bake. Store leftovers in an airtight container for up to 3 days.
