Ingredients

  • 1 cup lentils (green or brown)
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils thoroughly in a fine-mesh sieve to remove any debris.
  2. Place the rinsed lentils in a pot with 2 cups of water. Bring to a rolling boil.
  3. Once boiling, reduce the heat to low and simmer uncovered for about 20-25 minutes or until tender.
  4. Drain the lentils and spread them out on a plate or a baking sheet to cool slightly.
  5. In a large bowl, combine cooled lentils, halved cherry tomatoes, diced cucumber, bell pepper, red onion, and fresh parsley. Mix gently to combine.
  6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper until well combined.
  7. Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
  8. For an extra touch of indulgence, sprinkle crumbled feta cheese on top just before serving.
  9. For the best flavors, let the salad chill in the refrigerator for at least 30 minutes before serving.
