- 1 ½ cups all-purpose flour
- ½ cup brown sugar
- ¼ cup maple syrup
- ½ cup milk
- ½ cup unsalted butter, melted
- 2 large eggs
- 2 teaspoons baking powder
- ½ teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cheerful paper liners.
- In a large bowl, whisk together the flour, brown sugar, baking powder, and salt until thoroughly combined.
- In another bowl, mix the milk, melted butter, maple syrup, eggs, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients, and gently stir until just combined.
- Spoon the batter into the prepared muffin tins, filling each cup about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool for a few minutes in the tin before transferring them to a wire rack to cool completely.
Notes
These muffins freeze wonderfully! Just wrap them individually in plastic wrap and store them in an airtight container. They’ll last for about a month.
