Description

These Cozy Maple Muffins are soft, tender, and bursting with sweet maple goodness, perfect for breakfast or a delightful snack.


Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup brown sugar
  • ¼ cup maple syrup
  • ½ cup milk
  • ½ cup unsalted butter, melted
  • 2 large eggs
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cheerful paper liners.
  2. In a large bowl, whisk together the flour, brown sugar, baking powder, and salt until thoroughly combined.
  3. In another bowl, mix the milk, melted butter, maple syrup, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients, and gently stir until just combined.
  5. Spoon the batter into the prepared muffin tins, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the muffins to cool for a few minutes in the tin before transferring them to a wire rack to cool completely.

Notes

These muffins freeze wonderfully! Just wrap them individually in plastic wrap and store them in an airtight container. They’ll last for about a month.
