Description

These muffins are a delightful blend of low carbs and high protein, perfect for a nourishing breakfast or a snack.


Ingredients

  • 1 cup almond flour
  • 1/4 cup protein powder
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 3 large eggs
  • 1/4 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1 tsp vanilla extract
  • Optional: Sweetener to taste

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Combine the almond flour, protein powder, baking powder, and salt in a mixing bowl.
  3. Whisk together the eggs, applesauce, almond milk, and vanilla extract until smooth in another bowl.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Avoid overmixing for tender muffins!
  5. If desired, add sweetener to taste, stirring gently to mix.
  6. Divide the batter among the muffin cups, filling each just over halfway for the perfect rise!
  7. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in the tin for a few minutes before transferring to a wire rack. Enjoy warm!
