Description

Deliciously soft and chewy cookies that taste like hot cocoa, topped with sweet marshmallow frosting.


Ingredients

  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • ½ cup mini marshmallows (optional)
  • ½ cup unsalted butter, softened (for frosting)
  • 1 jar (7 oz) marshmallow crème
  • 1 cup powdered sugar
  • 1 teaspoon pure vanilla extract (for frosting)
  • 1 tablespoon heavy cream (optional, for consistency)

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Beat the softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Whisk together the flour, cocoa powder, baking soda, and salt in a separate bowl until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the chocolate chips and optional mini marshmallows.
  7. Scoop 1 ½-tablespoon portions of dough onto the prepared baking sheets.
  8. Chill the dough balls in the refrigerator for 30 minutes for thicker cookies, if desired.
  9. Bake in the preheated oven for 9-10 minutes, or until edges are set and centers look slightly soft.
  10. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
  11. Prepare the frosting by beating softened butter until creamy, then mix in marshmallow crème until smooth.
  12. Gradually add powdered sugar and mix in vanilla extract, whipping until fluffy.
  13. Pipe or spread the frosting onto cooled cookies.

Notes

Try adding peppermint extract or crushed candy canes for a festive twist. Store cookies in an airtight container for up to a week.
