- ¾ cup rolled oats
- 1 tbsp pumpkin pie spice
- ½ tsp baking soda
- ½ cup chocolate chips
Instructions
- Preheat your oven to 350ºF. Line an 8×8 inch pan with parchment paper.
- Whisk together the eggs, pumpkin puree, maple syrup, coconut sugar, melted coconut oil, and vanilla until smooth.
- Fold in the oat flour, rolled oats, pumpkin pie spice, and baking soda until combined.
- Stir in the chocolate chips.
- Pour the batter into your prepared pan, spreading it evenly.
- Bake for 24-26 minutes, or until a toothpick inserted in the center comes out clean.
- Cool for about 10 minutes before cutting into bars.
