Ingredients

  • ½ cup pumpkin puree
  • ⅓ cup pure maple syrup
  • ¼ cup coconut sugar
  • ½ cup melted coconut oil
  • 1 tsp vanilla extract
  • ⅔ cup oat flour
  • ¾ cup rolled oats
  • 1 tbsp pumpkin pie spice
  • ½ tsp baking soda
  • ½ cup chocolate chips

Instructions

  1. Preheat your oven to 350ºF. Line an 8×8 inch pan with parchment paper.
  2. Whisk together the eggs, pumpkin puree, maple syrup, coconut sugar, melted coconut oil, and vanilla until smooth.
  3. Fold in the oat flour, rolled oats, pumpkin pie spice, and baking soda until combined.
  4. Stir in the chocolate chips.
  5. Pour the batter into your prepared pan, spreading it evenly.
  6. Bake for 24-26 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool for about 10 minutes before cutting into bars.
