Description

A delightful gingerbread bundt cake topped with a rich cinnamon coffee glaze, perfect for the holiday season.

Ingredients

Scale
  • 2 1/2 cups unbleached flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 2 large eggs
  • 3/4 cup molasses
  • 1 cup brown sugar (packed)
  • 1 stick butter (softened)
  • 1/2 teaspoon salt
  • 1/4 cup strong coffee
  • 3/4 cup milk
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cardamom
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 cup powdered sugar
  • 1/8 teaspoon salt
  • 1/8 teaspoon cinnamon
  • 1 tablespoon coffee

Instructions

  1. Prepare your bundt pan: Spray or grease your bundt pan thoroughly to ensure your cake releases easily.
  2. Preheat your oven: Set your oven to 350°F (175°C) so that it’s nice and hot for baking.
  3. Mix the dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and spices until well combined.
  4. Blend the wet ingredients: In another bowl, beat together the softened butter and brown sugar until creamy and smooth. Add the molasses, eggs, milk, and strong coffee, mixing well until well combined.
  5. Combine the mixtures: Fold the dry ingredients into the wet mixture with a wooden spoon until just combined; don’t overmix.
  6. Fill the bundt pan: Pour the batter into the prepared bundt pan, spreading it evenly.
  7. Bake your cake: Bake in the preheated oven for about 55 minutes, or until a knife inserted into the center comes out clean.
  8. Cool and unmold: Let the cake cool for a few minutes in the pan, then gently invert onto a wire rack to cool completely.
  9. Drizzle with glaze: Prepare and drizzle the cinnamon coffee glaze over the cooled cake before serving to create a wonderful shine.

Notes

Make-ahead for improved flavor. Substitute dark corn syrup for molasses if needed.
