Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup dried cranberries
  • 1/2 cup white chocolate chips
  • 1 cup cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 1/4 cup dried cranberries (for topping)
  • 1/4 cup white chocolate, melted (for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. Whisk together the flour, baking powder, and salt in a bowl.
  3. Cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy in another bowl.
  4. Add the eggs and vanilla extract to the butter mixture, mixing until well combined and creamy.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the dried cranberries and white chocolate chips gently.
  7. Pour the mixture into the prepared baking pan, spreading it evenly.
  8. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  9. Allow the bars to cool before transferring them to a cooling rack.
  10. Beat the cream cheese, powdered sugar, and vanilla until smooth for the frosting.
  11. Spread the frosting on top of the cooled bars, sprinkle extra dried cranberries, and drizzle melted white chocolate.
  12. Cut into squares and serve.

Notes

Allow bars to cool completely before frosting for the best results. Store in an airtight container in the fridge for up to a week.
