- 3 ripe bananas, mashed
- 1/2 cup unsalted butter, melted
- 3/4 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/3 cup brown sugar
- 1 tablespoon cinnamon
- 1 cup powdered sugar
- 2–3 tablespoons milk
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Mash the bananas until smooth, then mix in melted butter.
- Add sugar, eggs, and vanilla extract, stirring until fully combined.
- Whisk together flour, baking soda, and salt in another bowl, then gently fold into the wet mixture.
- Mix brown sugar and cinnamon in a small bowl to create the swirl mixture.
- Pour half of the batter into the loaf pan, sprinkle half of the cinnamon mixture, then add the remaining batter.
- Top with the remaining cinnamon mixture and gently swirl with a knife.
- Bake for 50–55 minutes until golden and cooked through.
- Let the bread cool, then drizzle with the vanilla glaze before slicing.
Notes
Use very ripe bananas for the best flavor and sweetness. Do not overmix the batter to keep it light and soft. Let the bread cool before glazing.
