- 4 chicken thighs
- 1/3 cup chipotle sauce
- 1/4 cup honey
- Salt, to taste
- Pepper, to taste
- 1 cup smoked gouda cheese, shredded
- 4 large potatoes, peeled and chopped
- 3 tablespoons butter
- 1/2 cup milk
Instructions
- Preheat the oven to 375°F (190°C).
- Mix the chipotle sauce and honey until well combined.
- Season the chicken thighs with salt and pepper, and then coat them with the chipotle-honey mixture.
- Place the chicken in a baking dish and bake for 25-30 minutes, until cooked through and caramelized.
- Boil the potatoes in salted water until tender.
- Drain and mash the potatoes, then stir in the butter, milk, and smoked gouda until creamy.
- Serve the chicken thighs with the smoked gouda mashed potatoes on the side.
Notes
For fluffiest mashed potatoes, drain thoroughly and consider using a ricer for extra creaminess.
