Description

A comforting dish featuring juicy chicken thighs in a chipotle-honey sauce, served with creamy smoked gouda mashed potatoes.


Ingredients

  • 4 chicken thighs
  • 1/3 cup chipotle sauce
  • 1/4 cup honey
  • Salt, to taste
  • Pepper, to taste
  • 1 cup smoked gouda cheese, shredded
  • 4 large potatoes, peeled and chopped
  • 3 tablespoons butter
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Mix the chipotle sauce and honey until well combined.
  3. Season the chicken thighs with salt and pepper, and then coat them with the chipotle-honey mixture.
  4. Place the chicken in a baking dish and bake for 25-30 minutes, until cooked through and caramelized.
  5. Boil the potatoes in salted water until tender.
  6. Drain and mash the potatoes, then stir in the butter, milk, and smoked gouda until creamy.
  7. Serve the chicken thighs with the smoked gouda mashed potatoes on the side.

Notes

For fluffiest mashed potatoes, drain thoroughly and consider using a ricer for extra creaminess.
