Description

Whimsical cheeseburger skulls perfect for gatherings, especially around Halloween.

Ingredients

Scale
  • 5 tablespoons (56 grams) salted butter (softened)
  • 3 1/2 cups (420 grams) all-purpose flour
  • 1 large egg
  • 1/4 cup (50 grams) granulated sugar
  • 1 teaspoon salt
  • 1 tablespoon (9 grams) instant yeast
  • 3/4 cup (170 grams) lukewarm water (100–110 degrees Fahrenheit)
  • 32 ounces (907 grams) 80/20 ground beef
  • Salt and pepper (to taste)
  • 1 tablespoon butter (or lard or vegetable oil)
  • 8 slices white cheese (American, Cheddar, Provolone, Havarti, etc.)
  • Burger toppings: (tomato, lettuce, ketchup, mustard, mayonnaise, onions, pickles)

Instructions

  1. Prepare the Pan: Use one tablespoon of butter to liberally grease 8 skull cavities in your Nordic Ware skull pans. Reserve 2 more tablespoons of butter for later use.
  2. Mix Ingredients: Cut the remaining two tablespoons of butter into small pieces and place them in a mixing bowl along with the flour, egg, sugar, salt, and yeast.
  3. Combine: Pour the lukewarm water over the mixture and blend until well combined.
  4. Knead the Dough: Knead the dough in a stand mixer or by hand on a floured countertop for 5-7 minutes until the dough springs back when poked.
  5. First Rise: Cover the bowl with plastic wrap and let the dough rise until it doubles in size (approximately 1-2 hours).
  6. Shape the Dough: Once risen, deflate the dough and divide it into 8 equal pieces (about 95 grams each). Press pieces into the greased skull cavities.
  7. Second Rise: Cover the pans with plastic wrap and allow the dough to rise for an additional hour.
  8. Bake the Buns: Bake for 14-18 minutes, rotating the pans midway through.
  9. Brush with Butter: After baking, remove from the oven and carefully dump the skulls onto a cooling rack. Melt the remaining 2 tablespoons of butter and brush over the tops.
  10. Prepare the Patties: Divide the ground beef into 8 portions and shape them into skulls.
  11. Season: Just before cooking, season the patties with salt and pepper to taste.
  12. Heat the Skillet: In a skillet, heat 1 teaspoon of butter, lard, or oil over medium-high heat.
  13. Cook the Burgers: Place three patties in the pan and cook for about 3 minutes on each side.
  14. Add Cheese: Once cooked, place a slice of cheese on each burger.
  15. Melt the Cheese: Cover with a lid to allow the cheese to melt.
  16. Assemble the Burgers: Place each burger on a bun, add your favorite toppings, and serve warm.
