  • 1 medium Bell Pepper (sautéed)
  • 1 cup Mushrooms (sautéed)
  • 1 tablespoon Maple Syrup (drizzle for sweetness)
  • 1 cup Vegan Cheese (stirred in for richness)

Instructions

  1. Prepare Your Veggies: Peel and grate the sweet potatoes, chop the apple, and sauté the bell pepper and mushrooms.
  2. Heat the Oil: In a large skillet, heat the oil over medium heat until shimmering.
  3. Combine Ingredients: In a large bowl, mix sweet potatoes, apple, bell pepper, and mushrooms. Season with salt and pepper.
  4. Cook the Hash Browns: Add the mixture to the skillet, spreading it into an even layer. Cook undisturbed for 5-7 minutes.
  5. Flip and Cook Again: Gently flip sections of the hash. Cook for another 5-7 minutes until golden brown and tender.
  6. Finishing Touch: Drizzle with maple syrup and fold in vegan cheese just before serving.
