Instructions
- Preheat your oven to 375°F (190°C).
- Mix the halved cherry tomatoes, cubed mozzarella, chopped basil, and a sprinkle of salt and pepper in a bowl.
- Carefully cut a pocket in each chicken breast, creating space for the filling, and stuff generously with the tomato mixture.
- Secure with toothpicks if necessary to keep the filling tucked in.
- Heat the olive oil in a skillet over medium-high heat until it shimmers.
- Sear the chicken breasts for 3-4 minutes on each side until golden brown.
- Transfer the seared chicken breasts to a baking dish, drizzle with balsamic glaze, and pop them into the oven.
- Bake for 20-25 minutes, or until the chicken is cooked through and tender.
