Ingredients

- 2 lbs beef (chuck or brisket), cut into cubes
- 4 medium potatoes, peeled and diced
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 2 green chilies, chopped
- 1 cup tomatillos, husked and diced
- 1 tsp cumin
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, brown the beef over medium heat. Remove and set aside.
- In the same pot, sauté the onions and garlic until translucent.
- Add the green chilies and tomatillos, and cook for a few minutes.
- Return the beef to the pot and add the beef broth, diced potatoes, cumin, salt, and pepper. Stir to combine.
- Bring to a boil, then reduce heat and simmer for about 90 to 120 minutes, until the beef is tender.
- Garnish with fresh cilantro before serving.
Notes
This stew is even better the next day. Perfect for make-ahead meals.
