Description

A hearty and flavorful beef stew enriched with potatoes, green chilies, and tomatillos, perfect for warming the soul.


Ingredients

  • 2 lbs beef (chuck or brisket), cut into cubes
  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 2 green chilies, chopped
  • 1 cup tomatillos, husked and diced
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a large pot, brown the beef over medium heat. Remove and set aside.
  2. In the same pot, sauté the onions and garlic until translucent.
  3. Add the green chilies and tomatillos, and cook for a few minutes.
  4. Return the beef to the pot and add the beef broth, diced potatoes, cumin, salt, and pepper. Stir to combine.
  5. Bring to a boil, then reduce heat and simmer for about 90 to 120 minutes, until the beef is tender.
  6. Garnish with fresh cilantro before serving.

Notes

This stew is even better the next day. Perfect for make-ahead meals.
