- 2 lbs (900g) boneless skinless chicken breasts
- 2 tbsp (30g) Cajun seasoning blend
- 1/2 cup (115g) unsalted butter (cubed)
- 1/2 cup (120ml) chicken broth
- 1/2 cup (120ml) heavy cream
- 1 tbsp (15g) cornstarch (mixed with 1 tbsp (15ml) cold water)
- 1 cup (200g) long grain white rice (uncooked)
- 2 tbsp (10g) fresh green parsley (finely chopped)
- 1 tsp (2g) coarse black pepper
- 1/2 tsp (1g) red paprika flakes
Instructions
- Prepare the chicken: Place the boneless skinless chicken breasts in the bottom of your Crockpot. Sprinkle them generously with Cajun seasoning.
- Add the butter: Scatter the cubed unsalted butter over the seasoned chicken.
- Pour in the broth: Add the chicken broth to the Crockpot.
- Set the Crockpot: Cover and set it on low for 6-7 hours or on high for 3-4 hours.
- Stir in the cream: Once the chicken is tender, stir in the heavy cream.
- Thicken the sauce: Mix the cornstarch with cold water and pour it into the Crockpot.
- Cook the rice: Prepare your long grain white rice according to package instructions about 30 minutes before serving.
- Serve & garnish: Ladle the Cajun butter chicken over a bed of rice and sprinkle with parsley, black pepper, and paprika flakes.
