- 2 medium zucchinis, grated (about 2 cups)
- 1 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 and 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 cup chopped walnuts or pecans (optional)
- 1 cup chocolate chips (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 baking dish or line it with parchment paper.
- Prepare the zucchini by grating and squeezing out excess moisture.
- Mix the wet ingredients in a bowl: zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla.
- Combine the dry ingredients in another bowl: flour, baking powder, baking soda, cinnamon, and salt. Gradually add to the wet mixture.
- Add optional walnuts and chocolate chips for extra flavor.
- Bake for 25-30 minutes, or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack and slice.
Notes
Freeze the bars for a quick snack later. Use applesauce for a lighter option or make it gluten-free with a flour substitute.
