Ingredients

  • 2 medium zucchinis, grated (about 2 cups)
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts or pecans (optional)
  • 1 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 baking dish or line it with parchment paper.
  2. Prepare the zucchini by grating and squeezing out excess moisture.
  3. Mix the wet ingredients in a bowl: zucchini, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla.
  4. Combine the dry ingredients in another bowl: flour, baking powder, baking soda, cinnamon, and salt. Gradually add to the wet mixture.
  5. Add optional walnuts and chocolate chips for extra flavor.
  6. Bake for 25-30 minutes, or until a toothpick comes out clean.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack and slice.
