Description

A cozy and comforting homemade Greek pita recipe that is fluffy, customizable, and perfect for a weeknight dinner.


Ingredients

Scale
  • 1 ½ cups all-purpose flour (plus more for surface)
  • 1 tablespoon active dry yeast
  • 1 teaspoon kosher salt
  • ⅓ cup milk (warm)
  • ⅓ cup water (warm)
  • 2 tablespoons olive oil (plus more for the bowl and cooking)

Instructions

  1. Combine the flour, yeast, and salt in a large bowl.
  2. Add the warm milk and water to the dry ingredients, mixing to combine into a ragged dough.
  3. Drizzle in the olive oil, and knead the dough in the bowl for a few minutes until it forms a smooth ball.
  4. Coat a clean bowl with olive oil and place the dough inside.
  5. Cover the bowl with plastic wrap and let it rest for about 60 minutes, until it rises and doubles in size.
  6. Dust your working surface with flour. Remove the dough from the bowl and cut it into 8 equal-sized pieces.
  7. Stretch each piece into a small circle, then roll it out to about ¼ inch thick.
  8. Heat a cast iron pan over high heat and add 1 teaspoon of olive oil. Place one stretched pita in the pan, cooking for about 1 minute.
  9. Flip and cook for another minute until both sides are golden and puffed.
  10. Brush with melted garlic and herb butter if desired.

Notes

Customize with herbs, cheeses, or fillings. Great for freezing and reheating.
