- 1 ½ cups all-purpose flour (plus more for surface)
- 1 tablespoon active dry yeast
- 1 teaspoon kosher salt
- ⅓ cup milk (warm)
- ⅓ cup water (warm)
- 2 tablespoons olive oil (plus more for the bowl and cooking)
Instructions
- Combine the flour, yeast, and salt in a large bowl.
- Add the warm milk and water to the dry ingredients, mixing to combine into a ragged dough.
- Drizzle in the olive oil, and knead the dough in the bowl for a few minutes until it forms a smooth ball.
- Coat a clean bowl with olive oil and place the dough inside.
- Cover the bowl with plastic wrap and let it rest for about 60 minutes, until it rises and doubles in size.
- Dust your working surface with flour. Remove the dough from the bowl and cut it into 8 equal-sized pieces.
- Stretch each piece into a small circle, then roll it out to about ¼ inch thick.
- Heat a cast iron pan over high heat and add 1 teaspoon of olive oil. Place one stretched pita in the pan, cooking for about 1 minute.
- Flip and cook for another minute until both sides are golden and puffed.
- Brush with melted garlic and herb butter if desired.
Notes
Customize with herbs, cheeses, or fillings. Great for freezing and reheating.
