Description

A comforting and colorful egg dish baked with fresh vegetables and cheese, perfect for an easy dinner or brunch.


Ingredients

  • 4 eggs
  • 1 cup spinach, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup bell peppers, diced
  • 1/2 cup onion, diced
  • 1 cup cheese (such as mozzarella or feta)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs (like basil or parsley) for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Heat the olive oil in a skillet over medium heat. Sauté the onions and bell peppers until soft and fragrant. Add the spinach and cherry tomatoes, cooking until the spinach wilts beautifully. Season with salt and pepper to taste.
  3. Layer the sautéed vegetable mixture evenly in a baking dish.
  4. Create four small wells in the vegetable layer and crack an egg into each well.
  5. Sprinkle cheese on top of the eggs and vegetables.
  6. Bake for 15-20 minutes, or until the eggs are cooked to your liking and cheese is melted.
  7. Garnish with fresh herbs before serving.
